H\u00fchnerbr\u00fche, 2 El trockenen Sherry, 2 Tl Zitronensaft, 2 El fein gehackte Zwiebeln, 1 Bleichselleriestange, 1 El weiche Butter, 2 El Mehl, Salz, 12 glatte Petersilienbl\u00e4tter zum garnieren.<br \/>\n<\/span><\/span><\/p>\n<p><span style=\"font-size: small;\">In einem entsprechend gro\u00dfen Topf die Butter zum Schmelzen bringen. Bei mittlerer Hitze die feingew\u00fcrfelte Zwiebel und die in ganz d\u00fcnne Scheiben geschnittene Selleriestange anschwitzen, bis sie glasig sind. Dann das Mehl einr\u00fchren und unter st\u00e4ndigem R\u00fchren eine helle Roux herstellen. Vorsichtig unter st\u00e4ndigem R\u00fchren die H\u00fchnerbr\u00fche mittels eines Schneebesens einr\u00fchren, damit sich keine Kl\u00fcmpchen bilden k\u00f6nnen!<br \/>\nCa. 30 Minuten leicht k\u00f6cheln lassen. Dann die Suppe \u2013 entweder so belassen, oder aber durch ein Sieb streichen (Cremesuppe).<br \/>\nDanach, je nachdem, wof\u00fcr man sich entschieden hat, die Erdnussbutter, den Sherry und den Zitronensaft hinzuf\u00fcgen.
