R\u00e4ucherschinken am St\u00fcck, 1 mittelgro\u00dfe Zwiebel, 1 Tl frisch gehackte Petersilie, 60 ml Rinderbr\u00fche, 45 ml Cidre, 45 ml Apfelessig, Salz, Zucker, Pfeffer aus der M\u00fchle.<br \/>\nPellkartoffeln kochen, in kaltem Wasser abschrecken und die Schale abziehen.<br \/>\nDie Zwiebel fein w\u00fcrfeln, Salzen, Zuckern und Pfeffern und in einer Sch\u00fcssel durchziehen lassen.<br \/>\nDen Schinken in feine W\u00fcrfel schneiden und ohne Fett in der Pfanne knusprig braten, aus dem Fett nehmen und abtropfen lassen. Die Kartoffeln der L\u00e4nge nach halbieren und in m\u00f6glichst d\u00fcnne Scheiben schneiden. Auf die Zwiebelw\u00fcrfel in die Sch\u00fcssel geben.<br \/>\nDas ausgelassene Schinkenfett zusammen mit dem Cidre, dem Apfelessig, der Br\u00fche und dem Zucker in der Pfanne erhitzen. Gut durchr\u00fchren, damit sich der Bodensatz l\u00f6st und der Zucker sich aufl\u00f6st. Die Speckw\u00fcrfel in die Sch\u00fcssel geben, die gehackte Petersilie \u00fcberstreuen und die Zutaten gut miteinander vermengen und mit dem hei\u00dfen Dressing \u00fcbergie\u00dfen und vermischen.<br \/>\nEinige Stunden durchziehen lassen, dann den Kartoffelsalat in der Microwelle (oder im Backofen bei ca. 130\u00b0C) wieder erw\u00e4rmen.<br \/>\nPa\u00dft zu Allem Kurzgebratenen wie Steaks, Schnitzel, gebratenem Fisch oder als Beilage zum Barbeque<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>4 Port. 8 gro\u00dfe festkochende Kartoffeln, 200 \u2013 250 gr.
